Casseroles are one of my favorite winter-time dishes because each can be so versatile (i.e. savory versus sweet), and they are always best served warm! This medicated recipe features a french toast casserole, with fresh blueberries and topped with your choice of nuts and maple syrup. Make a cold morning “toasty” with this simple blueberry french toast casserole that will be sure to please.

Serves 10-12

Here’s What You Need:

  • 1 loaf of soft Italian or French bread (cut into chunks)
  • 4 large eggs (beaten)
  • ½ cup sugar
  • 2 cups almond milk
  • 1 cup fresh blueberries
  • 1 teaspoon organic pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 8 tablespoons cannabis-infused butter (melted)
  • 1 cup light brown sugar
  • 1 cup sliced almonds (pecans or walnuts would also work great!)

  • Optional garnishes: pure maple syrup, whipped cream, vanilla ice cream, etc.

How to Make Blueberry French Toast Cannabis-Casserole

To begin, preheat your oven to 350 degrees Fahrenheit.

In a large bowl, add 4 eggs, 2 cups of almond milk, ½ cup of sugar, 1 teaspoon of organic pure vanilla extract, and 1 teaspoon of ground cinnamon and whisk well to combine.

Next, cut up the loaf of bread into bite size chunks, and add the chunks of bread to the bowl containing your liquids. Then, add in the blueberries and mix around the ingredients to ensure the bread chunks soak up all of the liquid.

After, prep the baking pan by greasing it with a little bit of cooking spray – this will prevent the french toast casserole from sticking to the bottom of your baking pan.

Proceed to spread your saturated chunks of bread/blueberry blend into your prepped pan, smoothing the ingredients into the corners of the dish to create an even layer.

Next, in a medium-size skillet, heat up the 8 tablespoons of cannabis-infused butter over medium-low heat until fully melted. Then, add the almonds and light brown sugar to the butter, and stir until the sugar has dissolved.

Pour the contents of the skillet over top of the blueberry casserole – do not mix the casserole around after this step, as you want the buttery, sugary, nutty goodness to create a delicious topping for the french toast casserole.

After crowning the casserole with the cannabutter mixture, stick your now full casserole dish into your preheated oven. Bake the casserole for 30-35 minutes, or until the french toast is firm to the touch and has developed a light golden-brown in color.

Remove the blueberry french toast casserole from the oven and allow it to stand for a few minutes before serving. Serve with your choice of garnishes (my recommendation is pure maple syrup), and enjoy!
