Chicken Caesar wraps are one of my all time favorite lunches. They have a perfect blend of protein, veggies and carbohydrates to keep you feeling fueled and satisfied through out your day. This medicated recipe features a chicken Caesar wrap with grilled chicken, juicy tomatoes, crunchy Romaine lettuce, and a delicious home-made cannabis-Caesar dressing, all rolled up in a whole wheat tortilla wrap.
Here’s What You Need:
Chicken Wrap Ingredients
- 2 whole skinless and boneless organic chicken breasts
- 2 tablespoons cannabis-infused coconut oil
- 2 whole wheat tortillas
- 1 large tomato
- 1 heart of romaine lettuce
Caesar Dressing Ingredients
- 1/3 cup high quality mayonnaise
- 2/3 cup sour cream
- 1/2 cup freshly grated Parmigiano-Reggiano cheese
- 2 garlic cloves (finely minced)
- 2 tablespoons freshly squeezed lemon juice
- 1 teaspoon anchovy paste
- 1 teaspoon dijon mustard
- 1 teaspoon Worcestershire sauce
- 4 teaspoons cannabis-infused extra virgin olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
How to Make Chicken Caesar Weed Wraps
Caesar Dressing Preparation
To begin, finely mince the 2 cloves of garlic.
Next, in a small bowl whisk together the minced garlic, 2 tablespoons of freshly squeezed lemon juice, 1 teaspoon of Worcestershire sauce, 1 teaspoon of anchovy paste, and 1 teaspoon of dijon mustard until well combined.
Then, continuously whisk the Caeser dressing as you drizzle in the 4 teaspoons of cannabis-infused olive oil until well combined.
After, add in the 1/3 cup of mayonnaise, 2/3 cup sour cream, 1/2 cup of Parmigiana-Reggiano cheese, 1/4 teaspoon of salt and 1/4 teaspoon of black pepper. Whisk well until all the ingredients are fully combined.
Taste the dressing and make any necessary adjustments to the seasonings. Set the dressing to the side for now.
Chicken Wrap Preparation
To begin, rinse the tomato and romaine hearts and let them dry.
Next, dice the tomato into bite size pieces, and chop up the romaine heart, making sure to discard the stem on the end as you go. Set the chopped veggies to the side for now until you’re ready to construct your wraps.
Then, prepare a large skillet over medium-high heat.
Prep the pan with 2 tablespoons of cannabis-infused coconut oil.
Once the oil is melted and hot, place the 2 chicken breasts into the pan.
Cook the chicken breasts for 8 minutes or so, flip, and then continue to cook for an additional 8 minutes, or until the chicken breasts are fully cooked when cut into and golden-brown on the outside.
Remove the cooked chicken breasts from the skillet and plate them. Allow the chicken to cool for several minutes before attempting to handle.
Dice the warm, cooked chicken breasts into bite-size pieces.
Grab the whole wheat tortilla and place it on a large plate or cutting board.
Place a small bed of chopped romaine hearts into the middle of the whole wheat tortilla. Place the lettuce bits in a horizontal line, extending from 9:00 to 3:00 o’clock on the tortilla (clock face).
Next, carefully place the diced chicken breast pieces (roughly 1 chicken breast per wrap) in the same fashion, over top the romaine pieces.
Then, proceed to sprinkle diced tomatoes over the chicken and romaine.
Finally, drizzle the home-made cannabis-Caeser dressing over the ingredients until they are all coated.
Grab the bottom of the tortilla (6:00 o’clock), and pull it up, tucking it under the top portion of your line of ingredients. The tighter you tuck the tortilla, the better your wrap will hold.
As you’re tucking the tortilla into itself, grab both the left and right edges and fold those two sides into the center of the tortilla – sealing the edges of the wrap up.
Finally, continue to roll the tortilla up towards 12:00 o’clock until a burrito-like wrap is created.
Slice the wrap in half (width-wise), and serve immediately.
