The adult-version of the classic ice pop, these cannabis-infused popsicles will be sure to cool you down. With sweet and tangy flavors of mango and the smooth and creamy texture of coconut, this tasty frozen treat is delightfully refreshing and will make a splash during this hot Summer heat.

Yield: 10 pot-popsicles

Here’s What You Need:

  • 1½ cups coconut milk
  • 1 cup plain Greek yogurt
  • 3 tablespoons organic honey
  • 1 teaspoon organic pure vanilla extract
  • 3 tablespoons coconut cannabis oil
  • 1½ cups pureed mango (approximately 2 large mangoes or 3 smaller ataulfos)
  • ¼ cup orange juice
  • Popsicle stick molds

How to Make Coconut Mango Pot-Popsicles

Coconut Mixture:

To begin, in a medium bowl whisk together the coconut milk, coconut cannabis oil, honey, Greek yogurt and vanilla extract until fully combined.

Pour the coconut mixture into cold popsicle molds, until they are roughly one-third or half of the way full, depending on your preference. Freeze this initial layer of coconut mixture to create striping in your pot-popsicles.

Mango Mixture:

While the initial coconut layer is freezing, begin creating your mango puree.

First, wash and dice the mangoes.

Next, in a blender, combine your diced mangoes and orange juice and blend until the mangoes are pureed and resemble the consistency of baby food. If too thick, feel free to drizzle a bit more orange juice and blend once more.

After the mango puree is blended, remove the popsicle molds containing the now frozen coconut mixture from the freezer and pour in the pureed mango over-top the coconut to finish off the popsicles – you will now have a popsicle that has two distinct layers, half coconut and half mango.

If you want a more artistic looking popsicle, you can also choose to create multiple layers. To do this, spoon in a layer of your pureed mango on top of your initial frozen layer of coconut mixture. Place the popsicles molds back into the freezer and freeze for one hour, or until the mango layer is frozen.

Remove the molds from the freezer and then top it off with a final layer of the coconut mixture. Place the molds back into the freezer and allow to freeze until they are all frozen solid.

As a word of advice, you should try to cater these popsicles to please different tastes. For example, make some popsicles with more coconut and others with more mango. For this recipe, adding more coconut will make the popsicles stronger in terms of potency, so make sure you cater to individual medicinal needs.

Finally, freeze the full popsicles for several hours until fully hardened.

Remove the molds from the freezer and pop the pot-popsicles out of their molds.

Serve immediately and enjoy!
