This medicated recipe features a watermelon-lime sorbet that is simple, refreshing and perfect for wrapping-up this hot season. Enjoy this tangy and slushy treat pool-side, or even lounging on the couch! Watermelon’s deliciousness knows no bounds.

Serves 8-10 people

Here’s What You Need:

  • 7-8 cups fresh seedless watermelon chunks (approximately half of 1 watermelon)
  • 1¼ cups sugar
  • 1¼ cups water
  • 3 tablespoons freshly squeezed lime juice
  • 2 tablespoons cannabis-infused glycerin

How to Make Medicated Watermelon-Lime Sorbet

To begin, you are first going to create a simple syrup using some water and sugar. In a medium-size sauce pan, bring equal parts water and sugar to a boil. Once boiling, reduce the heat to medium-low and allow the two ingredients to simmer until the sugar is completely dissolved. Turn off the heat and allow your simple syrup to cool.

Next, add the watermelon chunks, fresh lime juice and cannabis-infused tincture to a blender. Blend the ingredients on high until the watermelon is completely pureed and the mixture is very smooth in texture. Then, proceed to pour the watermelon puree through a fine-mesh strainer (over a large mixing bowl) in order to remove any extra seeds or pulp.

Add the cooled simple syrup to the watermelon puree and stir well to combine.

Now, there are two ways you can continue with the recipe, one method requires an ice cream mixer and the other just involves your standard freezer. Choose whichever method is more practical for you.

Ice Cream Mixer Method

Place the bowl in the refrigerator for at least 1 hour.

After, remove the bowl from the refrigerator and pour the cooled watermelon puree mixture into the freezer bowl of your ice cream mixer. Mix for 25-30 minutes until the watermelon puree has transformed into a soft-serve watermelon sorbet.

Standard Freezer Method

If you do not have an ice cream mixer, simply pour the watermelon mixture into a 13×9 pyrex or glass dish.

Freeze the watermelon mixture until completely firm (roughly 2 hours or so).

When ready to serve, remove the pyrex from the freezer and scoop chunks of the hardened sorbet into a food-processor or blender and puree one more time before serving.

For a look that’s more similar to shaved ice, remove your hardened sorbet from the freezer and using a fork, scrape shavings off the watermelon sorbet. Scoop these shavings into your bowl.

Serve immediately and enjoy! You can store the watermelon sorbet for up to 2 weeks in an air-tight container in your freezer.
