Great Edibles Recipes: Chunky Cannabis-Peach Salsa, Source: http://200birdies.wordpress.com/2010/09/06/zucchini-lemongrass-pancakes-with-fresh-peach-salsa/Peach salsa is a delicious variant of this Latin staple, and proves to be far less acidic as compared to some tomato-based salsas too. This fresh and chunky cannabis-peach salsa pairs perfectly with your favorite tortilla chips and can even be used as a delicious garnish for a number of pork, fish and even chicken-based dishes. Wake up your palate with these mouthwatering summer veggies and bright citrus flavors!

 Serves 6-8

Here’s What You Need:

  • 1½ cups of pitted and diced fresh organic peaches (approximately 4-6 depending on size)
  • 1 cup diced fresh organic tomatoes (approximately 2 medium)
  • 1 green bell pepper (diced)
  • ½ cup red onion (diced)
  • ¼ cup fresh cilantro (chopped)
  • ½ jalapeno (deveined, seeded and finely diced)
  • ½ tablespoon fresh garlic (minced)
  • 2 tablespoons cannabis-infused extra virgin olive oil
  • 1 tablespoon freshly squeezed lime juice
  • 1 teaspoon organic honey (omit to keep vegan)
  • 1½ teaspoons salt (or to taste)
  • ½ teaspoon black pepper (or to taste)
  • ¼ teaspoon chili powder

How to Make Chunky Cannabis-Peach Salsa

To begin, thoroughly wash all of the fruits and vegetables, excluding the garlic.

Next, dice the peaches and discard the pits. After, dice the tomatoes, green bell pepper and red onion, and do not forget to finely dice the jalapeno pepper (nobody likes big pieces of hot pepper in their mouth). Then, finely mince the garlic and chop up some of the fresh cilantro.

After all the prepping, place the fruits and veggies into a medium-size glass bowl.

Add the cannabis-infused extra virgin olive oil, fresh lime juice and honey.

Season with salt, pepper and chili powder and then thoroughly toss all of the ingredients, making sure everything is coated and seasoned nicely.

Cover the bowl with a sheet of plastic wrap and refrigerate the salsa for at least 1 hour prior to serving.

You can choose to serve the salsa in a small bowl paired with some tortilla chips or atop some fresh fish or pork. The choice is yours.

Enjoy!
